Spring is here and with that comes a shift in lifestyle… A shift in the way we dress, the way we spend our leisure time and probably the most apparent, the way we eat. I am fortunate to live here in New York and have the chance to shop at some amazing Farmers Markets. Whether it be Union Square, Lincoln Center or Uptown there is a plethora a beautiful produce available to create healthy and delcious meals. Gone are the more heavy comfort foods of Winter and here come Heirloom tomatoes, asparagus, beets and fennel… Cooking is an artform and these are our tools. Fresh produce sustains us, and nourishes our bodies. If we are lucky enough to have this at our disposal, we must use it. Also, we must support the farmers and urban gardeners who work hard to create the best product. Our mothers always said, Eat your vegetables!
